Idli Sambhar is my all time favorite.
I can have this in breakfast , lunch or Dinner … Any time !
It’s deadly or Unbeatable Combination.
I love to Dunk Idlis in Piping hot Sambhar & enjoy my yummy soul satisfying meal .
There are many ways of making Sambhar … But my today’s recipe is very easy peasy & super yummy !
It’s very quick to make.
It’s no fail recipe .. I must say !
Idlis are very soft & spongy .
Sambhar is spicy & tangy .. Super yummy !

Idli recipe :-
1cup Dhuli Urad Daal( black gram skinned)
2 cups rice ( Regular or Basmati )
1/2 cup cooked rice or Flattened rice ( Poha)
1/2 tsp fenugreek (methi) seeds
salt as per taste
oil for greasing
Soak urad dal & fenugreek seeds together in enough amount of water for 4-5 hours.
Soak rice also in enough amount of water for 4-5 hours.
Now after soaking again wash very well & Darin rice & Daal.
Blend the urad dal and fenugreek seeds ( I removed most of the methi seeds but you can add in blender if you wish )together in a mixer till smooth.
Don’t add too much water …add water little by little as required.
Remove and keep aside.
Blend the soaked rice & cooked rice in a mixer till smooth. Remove and keep aside.
Mix the urad dal paste and rice paste together in a big bowl and mix very well until looks frothy.
Cover the vessel fully and keep at warm place to ferment overnight.
Once your batter is fermented.
Add salt in to the batter & mix well.
Put ladle full of the batter into greased idli moulds and steam for 12 to 15 minutes like we steamed Dhokla.
Repeat this process with the remaining batter to make more Idlis.
Serve hot with sambhar.
Sambhar Recipe :-
1 cup Arhar ( toor) Daal
1 carrot chopped
1 potato cubed
1 eggplant chopped
1 small portion of Radish chopped
1 small bottle gourd chopped
1/4 cup green peas
1 bell pepper chopped
Some florets of Cauliflower
Some chopped beans
3-4 tbsp oil
2-3 dry whole red chilly
1 tsp cumin seeds
1/2 tsp mustard seeds
Some curry leaves
2-3 pinch of Asafetida
1/4 tsp turmeric powder
2 tbsp red chilly powder or as per your heat tolerance
1 tbsp coriander powder
1/2 tbsp dry mango powder
2 tbsp Everest Sambhar Masala
2 finely chopped onion
4-5 chopped green chilly
3 tomatoes chopped
Chopped fresh coriander leaves
Salt as per taste
In a pressure cooker add some washed Arhar ( toor) Daal.
Add Chopped veggies of your choice & water !
I mentioned above which I used !
Add turmeric powder & salt .
Give it 2-3 whistle ! & let it rest…Until pressure release.
After releasing pressure… Give a perfect stir with ladle.
For tadka …
In a pan add some oil , when it heats add cumin ,mustard seeds & curry leaves .
Add some asafetida & whole dry red chilly then add Chopped onion & green chilly.
Sauté for while then add Chopped tomatoes again sauté for some time until oil start to separate.
Add red chilly powder , coriander powder , dry mango powder & Sambhar Masala ( I used Everest Sambhar masala ).
Add some salt (be careful while adding salt because we already added salt while pressure cook Daal & veggies )
Now add little water & sauté masala for 2-3 minutes again .
Add cooked Daal & veggies.
Add water to make up your choice of consistency.
Taste & check the salt .. Add if necessary.
Bring it to boil again.
Let it boil for 2 minutes .
Turn off heat .
Add some fresh chopped coriander leaves .
Now it’s ready to serve .
