Litti Chokha …yesterday I made it for Dinner !
Truly lips smacking & Chokha was finger licking with the smoky flavor !!
We both relished 👨❤️👨
Litti Along With Chokha is a complete meal, which you can have in Lunch or Dinner.
Litti is Kind of whole wheat flour ball , which is stuffed from Sattu (powdered roasted black grams) with herbs & spices.
I made Littis in Appe Pan😄 if you want to bake Littis , you can bake it in Oven.
Then dipped in Ghee( clarified butter )
Chokha is kind of mixture of Roasted mashed potatoes with Roasted Eggplant ( Baigan ) along with spices,roasted tomatoes , Garlic & coriander leaves .
Recipe :-
Ingredients for Litti :-
2 cup whole wheat flour
1/4 cup oil
1/4tsp Ajwain ( carom seeds )
Luke warm water for kneading dough
Salt as per taste
Ghee for dipping Littis
Ingredients for Litti Stuffing:-
1 cup Sattu ( Roasted Chickpea flour)
4-5 chopped green chillies
4-5 garlic cloves ( chopped finely or grated)
1 onion finely chopped
3-4 tbsp chopped coriander leaves
1/2 tbsp lemon juice
2 stuffed red chilli pickle (if you don’t have,you can use any pickle)
Salt to taste
Ingredients for Chokha :-
4 mid size roasted or boiled & mashedPotatoes
1 eggplant Roasted & mashed (Baingan )if you are using small size then take 2 Baingan
2 large size tomatoes roasted & mashed
2-3 cloves of Garlic ( finely chopped)
1 large onion finely chopped
3-4 tbsp or more chopped coriander leaves
1/2 tbsp red chilly powder
1/8 tsp black pepper powder
1 tsp cumin powder
1/8 tsp dry mango powder
1 tbsp mustard oil
Salt as per taste
Method:-
Firstly we will make Chokha :-
Chokha is also known as Bharta 😄
⚫️ Make 5-6 small slits in the eggplant & if you wish , you can insert the peeled garlic cloves in eggplant.
Roast the eggplant over a low flame turning from side to side frequently to make sure that all the sides get evenly cooked.
⚫️It will take a good 10-12 minutes. You will know the eggplant is done when the skin start to peel off as your are turning it and when a knife can be easily inserted into the eggplant. Remove and set aside to cool.
Once cool, mash the eggplant and keep aside.
⚫️Similarly, roast the tomato over the flame. Use tongs to turn the tomato from side to side to ensure even cooking and to avoid burning.
It will take 3-4 minutes.., then peel the skin.
You can use boiled or roasted potatoes!
⚫️Add all the ingredients of Chokha in a big bowl & mix everything.
Check the seasoning & add if necessary!!
Now Chokha or Bharta is ready to serve with Littis .
Now we will make Litti :-
⚫️Sieve the flour in big bowl and add salt, carom seeds and oil. Knead the dough properly with Luke warm water. Dough should be soft. Cover with a wet cloth and keep aside. Dough is ready. Let it rest for half hour.
⚫️In a big bowl , add all the ingredients of stuffing & mix well … If it seems too dry, add a tsp of oil and few drops of water to it. The texture should be crumbly, Keep aside.
Now our litti stuffing is ready .Make sure the stuffing is not too dry and not too soft.
⚫️After 20-30 min take the dough out and again knead it then make 10-12 equal size balls .now take each ball and flatten them with your palm and make an whole like we make in others stuffed things.
⚫️fill stuffing in the canter and close the ball by lifting the sides by hand.
keep aside and stuff rest of the balls in the same way.
⚫️Put appe pan on gas on medium flame.
Put the litti balls in the Appe pan without any oil.
⚫️Keep rotating litti balls to make sure they bake from all sides. Once it is done from all sides take the litti balls out…..you can dip it in ghee or apply some ghee with the help of brush .. Choice is all yours !!
⚫️Hot littis are ready to serve with Chokha .
Serve hot !!
Note :-
You can bake littis in oven also (160 C for 30 minutes).
But I prefer appe pan as it is so fast.
You can adjust anything according to your taste like … You can skip eggplant, onion & garlic .
